Last year, most of the Tuesday CSA pickups were done in the rain. Today was the first rainy Tuesday this year, with scattered showers all afternoon.
Clearly, though, the rain has been good for the plants! Today’s box held turnip greens, red leaf lettuce, fennel, beets, eggplant, zucchini, garlic, and mixed salad greens.
This week’s produce might be used in:
- tossed salad with thin-sliced fennel, olives, and orange slices
- grated carrots and beets
- rosemary roasted beets
- beet, walnut, & feta salad
- beet chocolate cake (really! This is fabulous, do try it.)
- zucchini and garlic pasta with pine nuts
- sauteéd zucchini with garlic & lemon
- stuffed zucchini with ground lamb & tomato (this works with eggplant, too)
