#CookoutWeek 2018: Take a Salad!

If you’re invited to a cookout, you’re probably going to bring something to share. And if you’re going to bring something, why not make it something that’s easy to make ahead of time and can be served right from the fridge, or at room temperature?

Here’s a salad that uses summer produce (my CSA gives me beets this month, and they’re tender and so, so good) along with easy to find ingredients. It can be made up to 2 days ahead of time, so plan your work to suit your schedule.

On the day of the cookout, just pull the covered bowl from the refrigerator and bring it along. Don’t forget a serving spoon!
