Fruity Oatmeal Muffins

Fruity Oatmeal Muffins | Get the Good StuffStart with some leftover oatmeal, combine it with flour and some fruit, and make quick and fabulous fruity oatmeal muffins.

This version uses frozen blueberries, but I’ve also used raisins, chopped dried apricots and cherries, or even diced bits of canned peaches. Find your favorite combination!

  1. You say cooked oatmeal.. how should it be prepared? With water or milk? How much? This looks really yummy so hopefully i can make it 🙂

    • I’m so glad this appeals to you. I started with 1 cup of cooked oatmeal. I use steel-cut oats, and they were cooked with water. If your leftover oatmeal is a bit softer, you might want to decrease the milk given in the recipe. Play around with it – I’m sure you know about how thick a muffin batter should be, and I’m sure you’ll do just fine. Enjoy!

  2. Hey, I actually have everything right now! That was the frozen blueberries? Or leave frozen?

    • Yes, for this photo, I used frozen blueberries. Do NOT defrost them before using, they would turn the batter an unappetizing blue/grey.
