Rice Cooker Apple Cake

apple cake When you’re cooking only for one or two, desserts can present a problem: many recipes make way, way too much. 

This gem of an upside-down cake is a lovely solution. I use apples here, though you could easily vary the fruit to your taste. Even better, it’s fuss free: once the fruit is prepped and in the pan, the rest of the cooking is automatic.

I use a little rice cooker to make this – it’s so easy! If you don’t have a rice cooker, you can cook this right in an ovenproof skillet. Pour the batter over the apples, and bake in a 350˚ oven about 20 minutes, until the top of the cake is browned and a toothpick inserted in the center comes out clean.
